Mediterranean Roasted Chicken with Lemon

- 5 chicken thighs
- 4 garlic cloves
- 2 lemons
- Extra virgin olive oil
- Sage

Preheat the oven at 350°F (180° C).
Prepare the ingredients: wash and dry the chicken and remove any stray feather, squeeze one lemon, cut in pieces another and peel four garlic cloves.
In a baking dish drizzle some olive oil, salt and pepper and toss the chicken until well-coated.
Add the herbs, the pieces of lemon and the garlic, hiding some behind the chicken.
Finally, add the lemon juice and some more salt.
Bake at 350°F (180° C) for 45 minutes. Leave it in the higher part of the oven for the last 10 minutes for a golden skin.
Before taking it out of the oven try to cut one piece to see if it is cooked, if not, leave it in the oven for another 15 minutes or so.
Serve the chicken with a generous spoon of lemon sauce on top and enjoy!
